Reports To: Sanitation Officer Kitchen Steward

Direct Reports: Utility Dishwashers Pot Washers Utility Cleaners

Position Summary

The Head Cleaner Sanitation is responsible for supervising and maintaining the overall cleanliness of the galleys and adjacent areas assigned to the Food Department.

Essential Duties and Responsibilities

Operational 

  • Oversee the team of Utility Cleaners, pot washers and dish washers.
  • Possess knowledge of the operation and working schedules of the galley.
  • Possess complete understanding of Shipsan, the European sanitation program, and the United States Public Health rules and regulations.
  • Oversee and manage the team of Utility cleaners, dish washers and pot washers.
  • Monitor cleaners, dish washers, and pot washers, to confirm that proper procedures are followed.
  • Ensure that subordinates follow duty schedules and perform the required tasks according to job description.
  • Ensure that subordinates report to work on time, and that personal appearance, uniform, and personal hygiene are in accordance with the company’s rules and regulations.
  • Be on standby when the ship is subject to a Shipsan/ USPH inspection.
  • Advise Kitchen Steward of discipline problems or poor performance.
  • Coach, motivate and evaluate subordinate while encouraging self-development.
  • Work with team to clean and sanitize all galleys and other assigned areas.
  • Clean and store kitchenware items not used on a daily basis, such as ramekins, molds, and snail dishes.
  • Manage the In Use material storeroom ensuring that all items are properly washed and stored.
  • Oversee the cleaning and working condition of all cleaning and washing equipment.
  • Report damaged or malfunctioning equipment to the Sanitation Officer.
  • Requisition cleaning materials and chemicals on a daily basis.
  • Ensure the proper use of cleaning equipment and chemicals.
  • Clean and sanitize work area in accordance with Shipsan, the European sanitation program and the United States Public Health rules and regulations.
  • Maintain clean work area in the event of any announced or unannounced Shipsan/United States Public Health type inspection.

Training & Development

  • Attend all meetings, training activities or classes related to assigned position as required.

Safety Responsibilities

  • Maintain a safe and sanitary environment for all guests and crew members.
  • Follow proper procedures and instructions at all times to prevent damage of any kind to ship or company property.
  • Know and comply with Shipsan, the European sanitation program, and United States Public Health Rules and Regulations pertaining to assigned working area.
  • Participate in safety drills as required.
  • Comply with Marella Cruises’ Safety and Pollution Prevention Program
  • Comply with Marella Cruises’ Operating Procedures Resources.

Qualifications

Knowledge, experience, skill, and/or ability

Required

  • Fluent in written and spoken English,
  • Must be able to communicate effectively with the senior management.
  • Ability to lead and make decisions.
  • Good administrative skills.
  • Experienced in coaching subordinates.
  • Must be cost and quality conscious.
  • Must adhere to specific scheduled work hours, yet be flexible if circumstances require it.
  • Work with international team members.
  • Perform assigned duties under pressure (time constraints).

Preferred

  • Fluency in additional languages

Required computer skills

  • Knowledge of Microsoft programs to include but not limited to, Outlook, Word, Excel, and Power Point
  • FBS/ICS Apollo Inventory system

Education/experience/certifications

  • High School education preferred.
  • Previous experience in hotel steward department.
  • Equivalent combination of education and experience

Other Skills:

  • Knowledge of general office practices, procedures and equipment.
  • Ability to prioritize tasks and work independently.
  • Strong organizational, interpersonal and communication skills.
  • Ability to interact with senior-level management and owner representatives.

Math Ability:

  • Able to add, subtract, multiply and divide in all units of measure using whole numbers, common fractions, and decimals.

Reasoning Ability:

  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
  • Ability to deal with problems involving several concrete variables in standardized situations.
