REPORTS TO: Food Safety & Sanitation Manager, Assistant Food Safety & Sanitation Manager

The Gig:

The Head Hotel Utility works in Food & Beverage and Housekeeping, in both front and back of the house. Schedules and specific duties are assigned on a rotational basis, with expectations being that all Head Hotel Utility will work in both departments during the contract.

When in Food & Beverage, the Head Hotel Utility assists the Assistant Food Safety & Sanitation Manager in supervising the overall cleanliness of all Galley outlets, pot wash and dish wash areas along with related locations assigned to the F&B Department.

When in Housekeeping, the Head Hotel Utility assists the Public Area Manager in supervising the overall cleaning of public areas including but not limited to atriums, public walkways and other public spaces.

What You’ll be Up to:

  • Supervises and ensures maintenance of the cleaning operation for all equipment and machinery within the Food & Beverage department including but not limited to Galley outlets, Galley consumables and all work orders in all Galleys, Outlets and Crew dining areas.
  • Supervises and assists in the daily cleaning procedures and maintenance of all Galleys, Outlets, Bars and Crew dining areas ensuring compliance with company policies and the latest Health and Sanitation regulations (USPH) at all times.
  • Ensures the implementation, regulation and monitoring of USPH standards onboard and ensures they are being adhered to.
  • Supervises and supports the dish wash areas during peak periods and supervises to minimize the loss of and breakage of tableware.
  • Responsible for the garbage segregation as per Company policy and ensures Hotel Utilities are trained accordingly.
  • Reports significant public health issues to the Hotel Director, Executive Chef and Food Safety & Sanitation Manager.
  • Ensure Integrated Pest Management procedures are followed at all times and trains Hotel Utilities as required.
  • Notifies Assistant Food Safety & Sanitation Manager of any breakages or losses of tableware to ensure stock levels are well maintained.
  • Ensure Hotel Utilities work according to the standards set out by USPH and HACCP and provides training where necessary.
  • Responsible for the appearance and cleanliness of all cleaning team members.
  • Supervises cleaning of public areas including but not limited to atriums, public walkways and other public spaces.
  • Supervises daily vacuuming, sanitizing, garbage removal and dusting/polishing of all public areas.
  • Supervises cleaning and maintenance of carpets and floors in public areas including shampooing, stripping, waxing etc.
  • Assists in the handling and distribution of Sailor luggage on embarkation/disembarkation.
  • Follows and ensures correct storage via COSWOPP when handling and/or using cleaning chemicals.
  • Reports to Technical department any defects or repairs that affect the daily operation in the galley and that potentially violate USPH and/or SMS requirements.
  • Monitors work schedules for all cleaning team members taking into account ILO Work and Rest hours ensuring guidelines are adhered to.

Additional Responsibilities:

  • Prepare appraisals for individuals under their remit in accordance with Virgin Voyages policies.
  • Attends passenger functions as required by Head of Department.
  • Partake in inspections, trainings and meetings as required by Head of Department.
  • Ensures that the set standards are kept and staff members work according to their respective job descriptions.

Super Powers Required:

  •  Minimum 2 years’ experience as Head Cleaner onboard a Cruise ship or 4/5* hotel/resort.
  • Excellent organizational skills and able to juggle several operations in one go.
  • Demonstrated experience in motivating, leading and engaging a diverse workforce to increase synergy and improve productivity.
  • Passionate about people and able to handle guest complaints with a smile!
  • All certificates as required by the STCW code for this position.
  • Knowledge of Vessel Sanitation Program and USPH regulations and procedures.
  • Basic knowledge of HACCP rules and regulations.
  • Good command of the English Language
